アメリカでの生食用の基準はどうなっているのでしょうか?

最近、日本で問題になっていますが、アメリカ（州によっても違うと思いますが）での生食用（ユッケ、カキ、生卵、レバサシ、、、）の基準はどうなっているのでしょうか?しっかりした検査はされているんでしょうか?

ユッケ、カキ、レバ刺しは今でも食べれますね。
でも、すき焼きに生卵出せなくなった。ってよく行く、しゃぶしゃぶ屋さんで言われた。
