Sairaku Dining Group was founded in 1886 and is headquartered in Saitama Prefecture. We are a company that operates restaurants centering on Japanese cuisine, including Japanese restaurants, buckwheat noodle restaurants, and Japanese-style ramen restaurants. Originally, Hinodeya Shokudo was just one restaurant in rural Saitama, but through my experience of working overseas in Europe and the United States in my 20s and 30s, I realized the uniqueness of Japanese food in the world （, the concept of umami and dashi ）, and the excellence of cooking techniques, and I decided to create this kind of restaurant. He decided to make the wonderful Japanese food culture universal and enjoyable to anyone anywhere in the world ！ and to spread the culture of dashi ！. In 2016, he expanded into the U.S.

We, "Wafu Ramen Hinodeya HIONODEYA RAMEN AND BAR," born from such a process, are not simply an "overseas ramen restaurant" selling ramen. We are here to spread the culture of dashi and the appeal of umami throughout the U.S. and the world through Japanese-style dashi ramen. This is a business model that we have entered in order to carry out this philosophy. We are competing not with "tonkotsu" (pork bone) ramen, which is the mainstream ramen in the U.S. and the rest of the world, but with Japanese-style "dashi ramen". Our one and only Dashi Ramen is differentiated and has established a new genre as "Japanese Ramen" made by a chef who has mastered Japanese cuisine, and since opening in the CA Bay Area, where the number of Ramen restaurants is rapidly increasing, we have always been ranked at the top in the region.

In 2016, Hinodeya expanded into the U.S. and began operating in San Francisco's Japantown. Since then, to date, the company has operated four directly managed restaurants in San Francisco, California, one directly managed restaurant in Dallas, Texas, and its first directly managed restaurant in Los Angeles is a popular ramen restaurant opening in September. The company is still in the process of growing. We are also working hard to continue to make great strides toward our goal of five global regions （ North America ・ Latin America ・ Asia ・ Oceania ・ Europe expansion by 2030 ）. Of course, we will continue to expand in Japan and the U.S., so we are also looking for people who can help us attack and protect these markets.

Our corporate structure and strategy is to "Succeed with the system, win with the team ！", and while maintaining and further brushing up our completed recipes and operations, we will continue to provide not only differentiated products but also "happiness" to our customers not only through our food but also through our meals.
