I don't drink basic milk and only use milk when I make cream stew, so it was in the fridge the whole time since I made the stew two weeks ago.

I smelled it, but it smelled like milk, so I couldn't determine if it was going bad for me.

Ham and other foods have a label that says, "Please consume within 5 days after opening" in addition to the expiration date, but there is no such label on the milk I bought, so I wondered if it is OK until the expiration date (May) even if it is opened once.

I only use it in stews and bought the smallest amount of milk and it cost around $4.

So I wanted to make another stew with the remaining roux, but I didn't want to waste another $4 to buy more milk
so I asked this question!

Roux should be fine for several months after opening, as long as it is stored in the refrigerator.

From my own experience, even long expiration dates are not always reliable.
In my family, we generally consume a 1/2 gallon of milk in about 3 days （ 5 days at most ） or less. We also store it refrigerated in a cool place in the back of the house, not at the door.
But in the past, despite the long expiration date, it has smelled rancid or turned into a yogurt-like mass within days of purchase. This is not a particularly cheap store, but a general chain supermarket.

Even if the expiration date is long, milk and tofu are sometimes left at room temperature after being delivered to the store until they are displayed, so
I think they deteriorate during that time.
On the other hand, even if the expiration date is short, if the product is refrigerated immediately after delivery and stored properly, deterioration may be slow.
（ But as for raw foods, if the expiration date has expired long ago, it may be better to dispose of them. It might be better.

How can you be ok with thinking you can drink milk once opened even after about 2 months in May ？
I would throw it away if you don't drink it within 3 days after opening.　I heard that people who got food poisoning from milk suffered a great deal, so ､ I would never drink it ！
You'd better drink it at least a week after opening ？ I made two batches of royal milk tea the next day and used up the rest.　
If you are going to make stew again, you can use all that milk to make more and freeze that stew and eat it 2 weeks later

Milk is a brand ､ if you don't care about taste, you can buy the smallest one at Ralph's or something for less than 2 ＄ ｡
I don't want to get food poisoning from drinking old milk for $4.00 💦

google anything, like expiration dates on frozen bread ｡ it's faster than asking here ｡

You could freeze the milk, too. ？ You could buy it when you make a stew and freeze the rest right after you make it. You could freeze it standing up and then lay it on its side when frozen and store it in the freezer.

You say $4 for the smallest one, but if it's under 500ml, you can get the same brand as Topix for $ 1.75 or so. ＄ I bet you could buy a gallon or so for 4 ？
You always go to the same spar, you don't have much range.　Did you end up using that milk ？

Some items are labeled to be consumed as soon as possible regardless of the expiration date once opened ｡ I don't mind eating sweets and instant foods, but I'm afraid to eat milk, meat and other living things weeks after they've been opened.
